Well… I did a thing. 🍟 Homemade freezer French fries so we can just grab a bag and cook when we want. Cut potatoes into fries. (Optional but helpful: soak in cold water for 30 minutes, then drain.) Boil in salted water for 5–7 minutes until just fork-tender. Drain and let them steam-dry 5–10 minutes. Toss lightly in cornstarch (don’t overdo it). First fry: Fry at 325–350° for 3–4 minutes — pale, not browned. Remove and let cool completely. Freeze: Lay fries in a single layer on a baking sheet.

Frozen French fries. Start out by washing and cutting your potatoes into French fries. Once cut, place in an ice bath for 10 minutes. While in the ice bath, boil a large pot of water. After the 10 minutes, place your fries in the boiling water. Blanch for 3-5 minutes. After blanching, place in another ice bath for 10 minutes. After the 10 minutes, remove fries and place on a towel to pat dry. Once dry, place on a baking sheet to flash freeze. Place fries in a single layer and freeze for 2 hours.
