You can do this with an egg dough or semolina/water dough, and any shape (aside from stuffed pastas which would need to be frozen for long term storage). Key points are ensuring they can air dry slowly (24-48 hours), then once fully dry you can store then in an airtight container in the cupboard! If you don’t have a drying rack you can use wire coat hangers 🥰 Egg pastas will be shelf stable for around 2-3 months stored this way, and non-eg
